Zucchini and Cheese Balls

You know those dishes that your mom would make once in awhile that were SO good but you never remember them because it’s not like she was making them everyday, just… every so often? Well, this is one of those recipes for me.

Don’t ask me why but I was sitting on the couch, watching the Bachelorette, allowing my brain to rot slowly…

And I thought to myself… “you know what I’m really craving right now?”

Zucchini and cheese balls!

So random, I know. But once you taste these, you’ll get it.

This is honestly one of the most original recipes ever and I can’t really take credit for it because it’s all my mom… or was it her grandma? I don’t know! Either way, you need to try these ASAP!

Move over zoodles, there’s a new way to eat zucchini and involves copious amounts of parmesan cheese.

Zucchini and Cheese Balls

Serves: 6

Ingredients:

  • 1 tsp Olive Oil

  • 2 Medium Onions, Diced

  • 3 Medium Zucchini, cut into semi circles

  • 2 Plum Tomatoes, Diced

  • 4 eggs

  • ½ cup Parmesan Cheese

  • ¼ cup Parsley, Fresh, Chopped

  • ¼ tsp Red Pepper Flakes

  • 3 tbsp Bisquick

  • Salt and pepper to taste

Directions:

  1. Place a large saucepan over medium heat. Add olive oil.

  2. Once pan is hot, add diced onions and stir. Add a dash of salt and allow to cook for ~2 minutes.

  3. Add diced zucchini and diced tomato to pan with onions. Stir to combine. Add salt and pepper to taste.

  4. Cover saucepan and allow vegetables to cook/steam ~5 minutes. (If you prefer vegetables to be softer, you can allow them to cook longer with the cover on).

  5. While vegetables are cooking, prepare cheese balls. In a medium bowl, add 4 eggs and beat with fork. The add parmesan cheese, chopped parsley, red pepper (if desired) and bisquick. Use fork to beat all ingredients together.

  6. Once vegetables have been cooking for ~5 minutes, begin to spoon egg/cheese mixture over vegetables in separate piles, each ~2-3 tbsp.

  7. Cover zucchini mixture again to allow cheese balls to puff up, ~5 minutes.

  8. Remove from heat and serve!
